Having been observing Emeryville Public Market in the past 6 months (it is on my way to work), I was excited to see many interesting new faces popping up in the market. I have been to Shiba Ramen several times (well thanks to the rainy days in the Bay Area, I need a lot of hot soup!) and I am pretty thrilled by the delicious broth and noodle.
The first time I tried Clean Broth with Pork (pork is the only choice as meat). I loved that there was a lot of scallion floating on the soup which picked up the flavors of the broth. And that egg york was almost floating out like a soft custard. Finally, the noodle has a distinct chewy pull (I just hate soggy and soft noodles).
If you need the extra spiciness, go for the spicy broth. You will find its surface paved with marinated ground pork. Although I found the spicy ramen a little bit salty, I asked some clear broth to add to my spicy broth – turned out to be just right.
Did I tell you the owner also writes a pretty interesting blog Ramen Chemistry ? This is my favorite part! I enjoyed reading through the journal and learning details about the back scene of this ramen bar, including the fun part and challenges.
I hope one day they can offer pork belly bun when the store scales up although I know keep the menu streamlined and simple is the way to go. I guess I can’t forget my pork belly bun experience at Momofuku !
