Since I moved to San Francisco Bay area, it has been quite rainy. My co-workers said that I brought all the rain here. Listening to all the happy holiday songs everywhere made me want to create something truly colorful for the happy holiday season. I found this recipe called “Mango-Avocado Bruschetta” by Hubert Keller in book Celebrity Chefs. I borrowed the concept and simplified it to make my own version. It was such a delightful snack that it is perfect for any snacking occasion. If you are hosting a Christmas party and make this as the appetizer, I guarantee you that it the baguettes will disappear very soon. Enjoy!
The Colorful Bruschetta
Serving Size: 12 pieces
Preparation Time: 20 minutes
Recipe adapted from Pg. 32 of Celebrity Chefs, Hearst Books
12 thin slices of baguette
1 diced mango
1/2 diced avocado
1/5 diced red onion
2 tbsp Extra-virgin olive oil
Swiss gruyere cheese (or any hard cheese you prefer as a garnish)
a little bit basil leaves
2 tbsp lemon juice
a pinch of garlic salt. I used Lawry’s garlic salt
- Put the baguette slices in a bowl, and add 1 tbsp olive oil, basil leaves, garlic salt and toss them until the sauces spread evenly among baguettes
- Preheat oven to 380F. Toast baguette slices on a baking sheet until they are golden for about 4 minutes. If you like them to be crunchier you can bake for 6-7 minutes.
- In a bowl, mix avocado, mango, onion, lemon uice, 1tbsp olive oil, sea salt and black pepper together
- Serve toasted baguettes with mango-avocado mixture. Garnish with swiss gruyere cheese
I didn’t add red pepper and cilantro as the original recipe did. You can try adding these two ingredients as well.
